Southern Banana Pudding: A Boozy Delight

Ingredients:


  • 2 cups of cold milk

  • 2 pkgs of instant vanilla pudding mix (3.4 oz size)

  • 1/4 cup of dark or spiced rum ( I like Gosling's or Cruzan 9)

  • 1 can sweetened condensed milk (14 oz)

  • 2 cups of heavy cream

  • 3 Tbsp powdered sugar

  • 1 teaspoon of vanilla extract

  • 4-5 barely ripe bananas, sliced

  • 1 box of vanilla wafers, gently crushed


Instructions:


  • Prepare the Pudding Mixture: In a large bowl, beat together the cold milk and instant vanilla pudding mix until it thickens. Add the rum and sweetened condensed milk to the mixture and beat to combine.

  • Make the Whipped Cream: In a separate bowl, beat the heavy cream until peaks form. Add about 2/3 of the whipped cream into the pudding mixture and fold in gently to combine. Add the powdered sugar to the remaining 1/3 whipped cream and fold in with a spatula to combine. (Save for topping at the end)

  • Assemble the Layers: In a serving dish or individual cups, start layering the dessert. Begin with slightly crushed up vanilla wafers, a layer of the pudding mixture at the bottom, followed by a layer of sliced bananas and crushed wafers. Repeat the layering process until you reach the top, finishing with the reserved whipped cream mixture on top.

  • Chill and Serve: Cover and refrigerate for at least 2 hours to allow the flavors to meld together. Serve chilled and enjoy the creamy, boozy goodness of Southern Boozy Banana Pudding.
