- 2 large egg yolks

- 1/2 cup of vegetable oil

- 1/2 cup of unsalted butter (room temperature)

- 2 cups of sugar

- 2 Tsp Vanilla Bean Paste (or good vanilla)


For the Rum Glaze:

- 1/2 cup of unsalted butter

- 1/2 cup of granulated sugar

- 1/2 cup of light brown sugar

- 1/4 cup heavy cream

- 1/4 cup of Gold rum

Step-by-Step Instructions


  1. Prepare Your Pan: Preheat your oven to 350°F. Butter and and flour a Bundt pan ( you can also use lots of Pam baking spray!), ensuring a smooth release. Evenly sprinkle the toasted pecans at the bottom of the pan.


  2. Mix the Wet Ingredients: In a small bowl, mix sour cream, milk and rum, set aside.

  3. In your stand mixer or a large bowl, beat the butter and oil for 1-2 minutes. Add the sugar and beat until lighter in color and fluffy (about 4 minutes).

  4. Add in the vanilla and eggs, one at a time.


  5. Mix the Dry Ingredients: In a separate bowl, mix the cake flour, baking soda, baking powder and salt. Whisk together


  6. Blend them Together: Add 1/2 of the dry ingredients to the large mixing bowl and blend until just combined, add 1/2 of the wet rum mixture. Alternate until just combined.


  7. Pour and Bake: Pour the batter over the pecans in the Bundt pan. Bake for 40-50 minutes or until a toothpick inserted in the center comes out with a few wet crumbs.


  8. Prepare the Rum Glaze: While the cake is baking, add all glaze ingredients to a sauce pan. Whisk all ingredients until sugar is dissolved. Simmer for 4-5 minutes. Remove from heat.


  9. Glaze the Cake: Once the cake is done baking, let it cool in the pan for 10-15 minutes. Flip cake out of pan and then put it back. This step seems silly, but it ensures soaking it with glaze won't make it stick. Pour 1/2 of the rum glaze over the bottom of the cake, let it soak in for 15 minutes. Flip cake back out of the pan onto a cake stand or serving plate. Pour remaining glaze over the the top, allowing it to seep into the cake for an extra indulgent flavor.
